
Weingut Fischer, Baden
This renowned winery consists of just over 17 hectares of vineyards, the top site being the Steingrube, on the south-western rim of the Nimberg, a small volcanic hill just east of the famous Kaiserstuhl mountains.
The soil is a combination of calcareous limestone, brown Jura and a layer of loess - which is extremely fertile. In addition with the mild climate and a low average rainfall the conditions are ideal for Pinot. The wines show this in a unique terroir character.
The main grape varieties are Spätburgunder (pinot noir), Grauburgunder (pinot gris) and Weissburgunder pinot blanc) and the annual production is approximately 100,000 bottles.
It is Fischer's aim to vinify the wines individually and gently in order to keep their natural and authentic character. Therefore they use different casks for storing the wines while maturing:
Stainless steel is used for the white wines to obtain their clear and typical varietal character, showing minerality und finesse.
Large wooden barrels are used for the red wines and sometimes for Chardonnay. The wood gives them a good balance and depth without covering the fruit and the grape is still dominating with slight tannins and a fine wooden flavour. 6 to 12 months is the minimum - depending on the intage.
Barriques are used for the top quality wines of the Pinot family. In these small barrels of oak the wines can develop their whole potential capacity, with fine tannins and vanilla aromas of the wood. The results are wines of high complexity and international character.
The winery is owned and under the leadership of Joachim and Silvia Heger and the winemakers are Juergen Jehle and Stefan Rinklin.
